"DATE: 08-22-07 Appearance: Pale lemon, almost water-clear.
Nose: Apples and spicy / sweet oak, and a light minerality.
Palate: Dryish with good acidity, light to midweight. Palate nicely follows the nose, though it is fuller than expected. Taut tannins and an austere feeling midpalate with a long clean dry finish.
Conclusions: Dry apple and light oak seem to work well together, especially where the goal is to make food-friendly fruit wines. This could substitute easily for many of the lighter white grape wines on the market, in both social and food situations. Capable of three or four years in a good cellar, mellowing, darkening and putting on weight as it goes." lfw
