"DATE: 08-22-08 Appearance: Straw.
Nose: Crisp apple, pear, butter, nice mineral touch and light spicy oak.
Palate: Dry with very good acidity, midweight. Palate nicely follows the nose, with an austere yet silky midpalate showing light tannins. Good mouthfeel, finish is good, clean, very dry and long.
Conclusions: Chablis-esque, food wine for sure. It should age well for six or seven years, becoming richer and softer in time. I am very happy to say I love this style of wine, squeaky clean from A to Z." lfw


FROM THE PRODUCERS:"Only 320 cases of our 2006 Chardonnay were produced. It was fermented in small French oak barrels to produce mouth filling, smootha and balanced flavours with oak integrated inot its cool climate fruit aromas. Malolactic fermentation further softened this dry wine's natural acidity to make it an ideal pairing with Nova Scotia seafood dishes such as lobster, scallops in creamy sauces, and salmon. 100% Nova Scotia grapes."
