Although ready for immediate consumption, Neige éternelle can be aged and savored for several years. Served cold (6°C), it is perfect with foie gras, cheese, or dessert.
The first edition of Neige éternelle, the 2003 harvest, was limited to 5,000 bottles.
The second edition of Neige éternelle, the 2004 harvest, is limited to 15,338 bottles."
"12-21-07 Appearance: Gold.
Nose: Intense apple, with tropical notes, peach/apricot, light oak, baking spices and a mineral character.
Palate: Sweet with great acidity, midweight. Fantasticly fresh attack, like biting into some kind of ridiculously ripe yet acidic apple. The rest of the show follows the nose, with great cleansing midpalate, and a very long clean finish.
Conclusions: Wonderful dessert wine, capable of long ageing (15 years). Worth the price, quite the show, serve in small amounts as a special treat." lfw
