"01-02-08 Appearance: Burnished gold.
Nose: Elegant ripe sweet apples with undertones of clove, cinnamon and nutmeg.
Palate: Sweet with almost fresh acidity, midweight plus. Bigger on the palate than the nose suggests, huge acid meets huge sugar and moderate alcohol and comes to a very satisfactory balance on the midpalate. The finish is very long and clean, with the acidity making it drier than it would otherwise seem.
Conclusions: Very good value for this kind of performance on the palate, capable of many years (15?) in a good cellar. I hate to say it but I think this is their best value. Not as rich as some of their other products, but superb acidity and spotlessly clean concentrated apple flavours makes the show work incredibly well here." lfw

Although ready for immediate consumption, Neige can be aged and savored for several years. Served cold (6°C), it is a perfect aperitif or accompaniment to cheeses with a slightly nutty flavor."
