"12-20-07 Appearance: Pale lemon.
Nose: Clean apple with light spices.
Palate: Off-dry with good acidity, light to midweight. Lovely fresh apple flavours, with some late-harvest like spices showing midpalate, and on the long clean finish.
Conclusions: Very nice alternative to off-dry riesling at the table, not sure about ageability (but should go at least a couple or three years). Very versatile and unusual wine. There are many people who cannot drink grape wines due to allergic reactions. Check with your doctor first, but this may be your answer for white table wine." lfw


FROM THE PRODUCERS:"Dégel is a still, dry cider evocative of white wine. It is a product of the sugars held captive in the ice that is the source of Neige apple ice wine. When the outside temperature rises, spring approaches, and the great thaw begins, we cull the second harvest of apple must. Six to seven months of cold fermentation follow.
