"DATE: 06-09-08 Appearance: Ruby.
Nose: Cassis, chocolate, raspberry, spicy/cinnamon/clovey notes, plum/cherry, and a brambly character.
Palate: Dryish with good acidity, midweight plus (almost but not quite heavy). Palate nicely follows the nose, with ripe tannins, and a soft rich mouthfeel on the midpalate. Nicely balanced alcohol/fruit/oak, another complex Carone wine with a very long clean finish.
Conclusions: This unusual to Canada variety is a cross of a Russian grape and Cabernet Sauvignon which has adopted most of the Cabernet qualities. To my taste this is the best and most ageworthy of the wines made yet at this winery, and is becoming a bit of a classic in Quebec. Look for this to go ten years (recently tasted the 2004, which is in excellent shape, still very youthful) in a good cellar, maybe much longer, who knows!?! Another wine in the modern style from the Quebec rebel, try this with a rich rare steak..." lfw


FROM THE PRODUCERS:"We are pleased to offer our 3rd vintage Cabernet Severnyi. The 2006 is screaming with rich fruit, vivacious acid and full body. Aged no less than 18 months in new French and American Oak barrels, this wine delivers a wallop! We will release a very limited production of the 2006 Cabernet Severnyi in 2008.

Winemaker's Notes
The Cabernet Severnyi is just now starting to show its true opulent color and highly concentrated cabernet purity of flavors and origin. A beautiful balance of power and elegance, this vibrant wine is delicious enough to enjoy now.

Should you wish to hold in anticipation that this wine will continue to gain weight and length, I recommend a cellaring of 2-3 years. Personally, I foresee it will drink beautifully up to 10-15 years from release."
