
You have found David Franklin. Once upon a time, David graduated from the cook apprentice program at Sir Sandford Fleming College. His culinary career took him to many kitchens throughout central Ontario including several years at the Royal York Hotel in Toronto and Chef de Cusine at Elmhirst's Resort in Keene, Ontario. David has also appeared as an instructor at Fleming from time to time; he is a strong believer in the culinary apprenticeship program. Lately, you might find him driving around this part of the province in the guise of a Marketing Associate for Sysco Foodservices of Ontario, a consultive role that keeps him in tune with the food and beverage industry.
David has been an advocate of Ontario wines for many years, which began with a tour organized by The Little Fat Wino in the early nineties. This love of Ontario wine culminated in the spring of 2001 with the construction of a new wine cellar at Elmhirst's Resort. At the time all selections on the wine menu were the best Ontario's wineries had to offer, and were not available on LCBO general list. This wine list was primarily selected by David, and in March 2003 won a special award at Cuvee 2003 for Continued Commitment to Ontario Wines. David has taken extensive beverage training in the sommelier program in Toronto, and has an excellent palate for the marriage of food with drink, whether wine, spirits, beer, or even tea! Following his passion for flavour, David is a member of The Opimian Society, Canadian Federation of Chefs and Cooks and the Escoffier Society of Toronto.
David has participated in various culinary competitions and brought home medals from such salons as Peterborough's Chocolate Sunday, Skills Ontario, Skills Canada, and the prestigious Tony Roldan Hot Food Competition. David is the 2-time champion at Chili Fest held during Snowfest week in Peterborough.
David keeps active in his community by participating in local fund raising events for Peterborough Arts Umbrella, United Way, Hospice Peterborough, and Five Counties Children's Centre.
