wine chemistry at work Tech Information: 04-18-08 $ tba (S: 0 A: 11.4) Winery

"DATE: 04-18-08 Appearance: Deep ruby / light purple.
Nose: Smoky oak, cherry, blueberry, lightly - and pleasantly - herbaceous.
Palate: Dry with good acidity, midweight. Palate follows the nose adding leather, light chocolate, some richness and softness on the midpalate. Nicely balanced oak-alcohol-fruit, good long clean dry finish.
Conclusions: Quite young red wine that needs two years to mellow out, but should live six to eight. Best now with spicy or acidic food (think tomato paste/spaghetti/pizza) or burgers on the bbq. In five years it will mellow into an interesting wine, but will never turn into a modern soft and easy slob of a wine." lfw
