wine chemistry at work Tech Information: 04-18-08 $ tba (S: 4 A: 10.4) Winery

"DATE: 04-18-08 Appearance: Pale lemon.
Nose: Pear, spices, a citrusy, zesty component as well.
Palate: Medium dry with moderate to good acidity, midweight. Palate nicely follows the nose, with a clean fruit-driven attack and a lemony/grapefruit echo on the midpalate. Finish is good clean long and dries out as it progresses.
Conclusions: Not too sweet for white wine dishes such as turkey with cranberry, ham with something sweet, or moderately hot / spicy foods. Think also pork chops with applesauce or a sweetish chutney. Would be a nice change of pace as an aperitif, serve chilled for this usage though. Should age two to three years, but will soften and lose its edge somewhat." lfw
