"RETASTED 07-16-08 Colour has lightened as expected, nose is slowly developing, tannins a bit softer, everything on schedule. DATE: 08-28-07 Appearance: Dark ruby / light purple.
Nose: Nose is relatively shy/undeveloped at this stage, but shows normal cassis, raspberry, light chocolate and spicy oak.
Palate: Dry with good acidity, midweight. Palate greatly exceeds the nose (this is normal for some high quality wines at about two years old - youthful aromas have decreased faster than bottle-aged bouquet has developed). Elements follow the nose, adding some rich ripe and slightly aggressive tannins to the midpalate. Warm long clean dry finish.
Conclusions: Very good quality Cab Sauv for three years from now, which will shine in six and last ten. All the elements are there, just not yet knit together. If you must do it now, put it with a good cut of rare beef." lfw
