Jim Warren (of Stoney Ridge Winery fame) needs no introduction as a winemaking consultant and multiple wine award winner (he's won just about everywhere!). The picture to the left shows that he can, on occasion, accomplish whatever he sets out to do - great fish, Jim!
On this day, we will be tasting experimental wines from new varieties, and Jim will be commenting on the wines, saying what he would do as a winemaker to bring them to market in his highly successful way. We will also press him for information about how to make soft and silky wines in difficult years such as 1992 and 1996...
His real accomplishment this day will be sharing the winemaking seminar with some
little fat wino who will be presenting information about some new winemaking tannins, enzymes, malolactic cultures and yeast strains. This information will be distilled from the Scott Laboratories fermentation handbook and personal winemaking contacts. Much can be done to help when nature fails to deliver completely ripe grapes...
