"DATE: 04-11-09 tasted during 2009 Ontario Wine Awards Judging
Appearance: Ruby.
Nose: Spicy and sweet oak, leather, redcurrant, cherry, raspberry.
Palate: Dry with good acidity, midweight. Palate follows the nose. Dusty tannins on the midpalate should age out. Finish is good long clean and dry with a bit of mineral character.
Conclusions: Cab franc from a good producer in the Southwest of Ontario which at this point is a bit dominated by the tannins. This also happens to Pinot Noir at about the same age, where the youthful flavours from fermentation are receding while the more complex flavours from ageing are not yet fully developed (some call this the "Valley" or "Trough"). This should go at least another six years, and will become softer, silkier and sexier as secondary flavours develop, harmonizing with the tannins by 2011. Best now with flavourful foods." lfw


FROM THE PRODUCERS:"The aromas extending upwards are woody and earthy, exhibiting shitake mushroom and a soupcon of tarragon. The taste is satisfying with jamminess in berries and plum, cassis and a tincture of violet. With its good tannins, it promises a good shelf-life and more structure with age."
