wine chemistry at work Tech Information: 08-13-07 $ 18.00 (S: 0 A: 12.3) Winery

"DATE: 08-28-07 Appearance: Ruby / light purple.
Nose: Blackberry, cassis, pencil lead, chocolate, spicy oak and a pleasant herbaceous character.
Palate: Dry with good acidity, midweight plus. Palate nicely follows the nose, quite complex, adding ripe tannins and rich mouthfeel midpalate. Very long clean dry finish.
Conclusions: Young modern Cabernet Sauvignon of high quality, capable of ten years in a friendly cellar. Tannins are not yet integrated into this keeper, but the wine is friendly already, and well-mannered enough to be a welcome guest at the festal board. In five years this will be a stand-alone to drink by itself in front of the fireplace on a cold winter night. Good value." lfw

FROM THE PRODUCERS:"Ripe blackberries with dark chocolate and toasty notes. Subtle soft tannins with flavours of dark ripe fruit, vanilla and leather."
