wine chemistry at work Tech Information: 03-31-07 $ ? (S: ? A: ?) Winery

"DATE: 03-31-07 Appearance: Straw with green..
Nose: Lightish pear/apple, some mineral, some spice, essentially undeveloped, very youthful (perhaps bottle shock even).
Palate: Dry with good acidity, midweight. Fruit follows the nose, soft/rich midpalate, good long clean finish.
Conclusions: Very nice very youthful wine (tasted blind in a judging situation). Already quite attractive, but will certainly put on more complexity and become even better with time. Too young to estimate longevity, but already showing great potential." lfw

FROM THE PRODUCERS:"Nadjas vineyard is located on the top of the property, overlooking all the Pinot Noir and Chardonnay vineyards. It is noticeably cooler and subjected more to the escarpment winds. It was spotted early that the Riesling in this vineyard maintains its natural acidity and produces fruit with great intensity and flavour.

This Riesling was picked solely on flavour in mid October. The cropping level was 0.8 tonnes/acre. It was picked due to its intensity, purity and freshness. The bunches were loaded straight into the press and run to stainless steel, where it settled cold for 5 days. After racking off the solids it was fermented at extremely low temperatures for about 40 days. This low temperature was used to maintain the freshness and purity of fruit evident in the grapes and juice.

The finished wine shows amazing depth of flavour, minerality, lemon/lime citrus notes with a sharp backbone of acidity. It is a very intensely flavoured Riesling with great length. Residual sugar balances the natural acid and the wine should age well for at least five years from vintage. The wine is exceptionally fresh and the resulting alcohol of 10.5% highlights the decision of Darryl to pick this Riesling on its flavour intensity and not based on sugar levels."
