Gurth Pretty, a chef by trade, cheese aficionado and author, had the idea of creating a book with recipes using cheeses. After writing the popular Canadian Artisan and Fine Cheeses he teamed up with Tony Aspler, a famous wine writer and author of many books, who contributed by choosing wines, beers, and ciders for each recipe.
The book contains beautiful photography and is worth purchasing just for the pictures. Recipes and wine matches are a bonus.
The book starts with a cheese primer, and continues by outlining categories of cheeses and continues with buying and storing strategies. Tony Aspler then takes over with a wine and cheese primer, a general chart matching cheese and wine. Here there are two lists – the first with Canadian wines and cheeses, the second with imported wines and cheeses.
Following these informative pages come recipes broken down in categories – brunch, lunch, hors d’oeuvre, appetizers, main courses, salads and side dishes, dessert.
