"DATE: 08-19-07 Appearance: Ruby with some brick at the edge.
Nose: Cassis, raspberry, smoky oak, light chocolate, light nuttiness.
Palate: Dry with good acidity, midweight plus. Palate nicely follows the nose, with silkiness and good mouthfeel midpalate. Good long clean dry finish.
Conclusions: Nicely maturing Cab Sauv still has five years in front of it, or more. Developing nicely into something that could go into a Blind Bordeaux tasting and do reasonably well. Very good value for maturing wine. Very useful in red meat situations, including medium or medium rare as well as rare dishes." lfw
