"DATE: 08-22-07 Appearance: Salmon plum.
Nose: Plum of course, with a distinct herbal character.
Palate: Medium with moderate acidity, midweight. Big cooked plummy character on the attack, with a herbal/spicy midpalate, and a long clean finish with light tannins and a bit of heat.
Conclusions: Intensely flavoured plum is one for flavour junkies, not for the soft and easy crowd. This would work with moderately to heavily spiced cuisine, or dishes with medium heat. Could age for three or four years, slowly becoming complex and more mellow." lfw
