"DATE: 08-22-07 Appearance: Purple with brick at the rim.
Nose: Deep cassis with spicy cedar notes and a herbal tone.
Palate: Dry with good acidity, midweight. Palate nicely follows the nose, with dusty tannins and richness added midpalate, and a very long dry clean finish.
Conclusions: This should age well for about five to seven years, mellowing and smoothing out with time, becoming as complex as a good meritage in time. Try it now with red meat dishes, rare or medium rare, using it as you would a similarly young cab merlot. If you are one of the unfortunates who can no longer drink grape wines and miss your elegant reds, you might (Please check with your doctor first!) try something like this. In many cases people who can no longer drink grape wines can drink fruit wines due to the difference in chemical makeup between the two. I speak from no medical knowledge, but from talking to people about wine over a thirty year period." lfw
FROM THE PRODUCERS:"A pleasant drinking wine that is light bodied and balanced. Ebony is a dry red wine that possesses an intense bouquet of fresh black currants with smokey undertones. This well balanced wine is excellent when served with wild game, red meats and quality aged white cheddar. One of our personal favourites!"
