"DATE: 12-21-07 Appearance: Deep ruby.
Nose:Cranberry/blackberry/blueberry with light oak notes.
Palate: Dry with good acidity, midweight. Palate is richer than the nose, with nice mouthfeel, good alcohol/fruit/acid balance. Good long clean finish.
Conclusions: Good varietal character for Sabrevois (I've made it more than once), which is not a variety that everyone will like by itself. Some do, some don't. I like it as part of a blend, my personal prejudice, but this wine tastes as it should. Would work best with flavourful meat dishes (spicy sauces), and should go five years in a good cellar." lfw


FROM THE PRODUCERS:"Le Sieur de Sabrevois tire son nom du cépage rustique Sabrevois (croisement des raisins Seyval et Seneca) ; vinifié avec macération pelliculaire, il est élevé en fût de chêne pendant plusieurs mois.

Ce sabrevois coloré, charnu, et tannique, révèle un vin rouge équilibré, avec des arômes de baies noires.

TEMPÉRATURE DE SERVICE : 16 à 18 °C

ACCOMPAGNEMENT : Viandes rouges, viandes rosées à sauce douce, chairs blanches relevées, pâtes à sauce tomatée, fromages assez relevés.

CONSERVATION : 10 à 14 °C À l’abri de la lumière Bouteille couchée."
